One Love is a beautiful company, I have had the pleasure of stumbling across. They are health based, locally sourced, and environmentally friendly. What more could you ask for? Now, what is One Love you ask? It is a company that brews Kombucha right here on James Island, Charleston, South Carolina. And what is Kombucha you ask?
Kombucha is a fermented tea, made with green, black or white tea, sugar, and various natural ingredients added for flavor. What makes kombucha so healthy is fermentation process, and fermented drinks and foods are essential for gut health and building “good bacteria”.
One Love utilizes a small warehouse to ferment the kombucha. The tea ferments in 80 gallon fermenters. The ingredients include sugar, (hibiscus and ginger, for this particular flavor) and SCOBY (symbiotic culture of bacteria and yeast). They mainly use green and white tea in their blends, to keep it light and help the flavors to come through. This process lasts about 2-4 weeks. The fermentation room sits at a temperature of about 74 degrees Fahrenheit. After the fermentation process is done the SCOBY is removed from the surface and the kombucha is ready to be bottled. All of the bottles are sanitized and reused. As everything is sourced locally, customers return bottles to reuse and reduce the amount being produced. As the company solely produces kombucha, for the time being, they plan to introduce a line of fermented foods and vegetables in the near future.
